We Do Want to be Open and Baking
I some days cannot believe we are still not open. It is hard for bakers to not bake. I applied for State certification as soon as our ovens were in. Big mistake on my part. While I was told that the certification process in NYS is approximately two weeks, we are on week seven and I am stymied. I had not idea the bakery would be closed for six months for the remodel and certification. Continue reading We Do Want to be Open and Baking

Arsenic Levels In Rice are Why We Don’t Use Rice in Our Gluten Free Baking Mixes
When we first found out that as a family we had Celiac Disease, we were in shock, as most families are. The prospect of changing our lives so drastically was overwhelming. What was even scarier was the realization that most gluten free products that replace gluten based ingredients were replaced with rice. While I happen to love rice – one of the few starches growing up that did not make my stomach hurt, my understanding of arsenic levels in rice was a little scary.
