Do You Love Brussel Sprouts?
I grew up with brussel sprouts, but I never liked them. My mother would boil them and put them on the table with cups of vinegar. We were supposed to dunk them in the vinegar and eat them. My mother is an amazing cook, but these were not a vegetable I ever thought of as palatable. They were in my opinion, rank.As I started cooking on my own, I found a new approach to brussel sprouts. I would cook them from frozen. Often in the oven, sometimes in a pan, but I cooked them with butter and olive oil and a deeply rich balsamic vinegar and soy sauce with spices. Insanely delicious.
Getting diagnosed with celiac’s put an end to this delicious concoction. I still make them, but without the balsamic vinegar which is mostly aged in a series of wheat pasted wooden barrels, I have had to adapt and change. This is one of those recipes. How Good Are Brussel Sprouts Anyway?
Once I learned to roast and fry brussel sprouts, I started to truly love them. I use both fresh and frozen. While I prefer fresh which can spoil more quickly than I like – I always keep frozen on hand. Frozen cooks far more quickly no matter which method I use. Brussel sprouts are actually pretty healthy. As a type two diabetic, I work with fiber to control my blood sugars. Half a pound of brussel sprouts work well at dinner to keep my blood sugars from rising too quickly. So, vegetables with fiber, are an important aspect of my diet. In the United States, we in general do not get enough fiber, so I make sure I get enough every day. Brussel sprouts definitely help with fiber.
Gluten Free Crispy Brussel Sprouts
An easy recipe to make brussel sprouts crispy and delicious. This is made with frozen brussel sprouts and gluten free bread crumbs.

Equipment
- 1 cutting board
- 1 Kitchen knife
- 1 Medium Bowl
- 1 Mixing Spoon
- 3 Sheets of Parchment Paper
- 1 baking sheet
Ingredients
- 1 12 oz bag if frozen brussel sprouts
- 1.5 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp onion granules
- 1/2 tsp Italian seasoning
- 1/4 cup finely grated parmesan cheese
- 1/4 cup gluten free breadcrumbs or gluten free panko
- 2 cloves garlic either minced or put through a garlic press
Instructions
- Defrost brussel sprouts.
- Preheat oven to 400 degrees Fahrenheit.
- Line baking tray with parchment. More than one sheet of parchment often means no clean up.
- Prep the brussel sprouts. Cut off the bottom and then slice each one in half unless to small to cut in half.

- Place all the trimmed brussel sprouts in a bowl and drizzle the oil over the sprouts.

- Once sprouts are coated, add the seasonings.

- Add freshly grated parmesan to the bowl. If you do not have freshly ground, use what you have!

- Mix the spices and cheese together in the bowl.

- Add the breadcrumbs and combine with the rest of the bowl.

- Coat parchment paper with a little more olive oil.

- Carefully Spoon the Sprouts onto the tray.

- Sprinkle remaining seasoning over the brussel sprouts.

- Roast in the oven for 15-17 minutes. The toppings on the tray will be overcooked. The toppings on the brussel sprouts will simply brown.

- Plate and serve!
