Almond flour is amazing for a number of reasons. It is high in protein and high in fiber, which means for diabetics it stabilizes blood sugars. We love that. Almond Flour as a Gluten Free Flour Base
As an individual of Italian descent, almond flour products are near and dear to my heart. We are working on cakes and cookies and scones for recipes this year. I wanted an all in one flour base that does not require you buy multiple flours to create delicious baked goods. More recipes will come in the next few months. I have found that Almond Flour products are naturally moist and longer lasting than other flours. These gluten free almond flour bacon and green onion scones, if they lasted that long can sit on the counter for more than a week. No refrigeration needed and they remain delicious and have a soft bite for the entire time. I love an easy recipe and these scones are easy. It contains ingredients most of us already have in the house (once you buy the superfine almond flour). The recipe takes a little time to pull together and then depending on your oven, they cook in around 18 minutes. We have large convection ovens. I have not tested them in a regular oven.
These are wonderfully Lactose Free Scones
Half our family is lactose free. So we carefully pick lactose free milks and butters and cheeses. Yes there are absolutely Lactose Free cheeses. We adore Cabot Cheese which is located in the northeast and is naturally lactose free. We also can find some amazing lactose free cheese in Aldi which is a wonderful choice for high quality cheeses made like european cheese with special milks and long aging processes. It is the long aging that allows the cheese to consume the milk sugars as it ages. We have cheese back again. For the small amounts of milk called for in the recipe, we use fairlife milk. Fairlife milk is higher in protein and it is the only lactose free milk we do not react to. We have tried them all, and if you can find fairlife, it is worth it to stay safe.
Scales Do Help
As professional bakers, we use scales to ensure every recipe turns out the same every time. It is recommended to use a scale. They can be pretty inexpensive on Amazon and you can get a relatively good scale for $15-$20 there. Scaling is quite easy once you get used to it, and we find here in the bakery that it cuts down on utensils. There is a lot of cleaning up in a bakery and at the end of the day, it is our taxing to clean lots of measuring cups. Everyone works differently, but in order to replicate the recipes easily, we truly trust and love our scales.Additional Resources:

Moist and Delicious Gluten Free Almond Flour Bacon and Green Onion Scones. Easy to Make and stay soft for days.
Servings: 8 pieces
Equipment
- 1 Scale
- 2 Medium Bowl
- 1 small bowl
- 1 Mixing Spoon
Ingredients
- 240 grams Superfine Almond Flour
- 1.5 grams salt
- 10 grams baking powder
- 1 tbsp sugar we use demerara
- 56 grams earth balance buttery sticks you can use butter if you prefer
- 1 large Egg
Instructions
- Preheat oven to 350 degrees
- In a medium bowl, place the earth balance (or butter or margarine or vegan butter) in and microwave until it is mostly melted.

- In another medium bowl, combine the Almond Flour, Salt and Baking Powder. Combine

- Add the crumbled bacon, chopped green onion and shredded lactose free gouda cheese to the dry mix and combine until evenly distributed through the flour.

- To the mostly melted shortening, add 1 tbsp of sugar (we use ground demerara for flavor). Combine until the sugar goes smooth.

- Add the egg to the wet mixture and gently combine.

- Add the dry ingredients bowl to the wet ingredients bowl and combine until a soft dough forms. Shape into a bit of a ball within the bowl. Wrap with cling film.

- Place in the freezer for 15-20 minutes.

- Place the balled dough onto a mat and gently flatten until it forms into a disk about 7.5-8 inches wide. Make sure the sides are well formed with no cracks.

- Cut the disk into 8 pieces.

- Carefully transfer the pieces to a parchment lined tray. Leave room for the pieces to spread as they cook.

- Place in the preheated oven and bake for approx 18 minutes (depending on your oven) and allow them to cool fully before moving to a plate or container.
