Ingredients
240gramsSuperfine Almond Flour
1.5 gramssalt
10 gramsbaking powder
1tbspsugarwe use demerara
56grams earth balance buttery sticksyou can use butter if you prefer

Instructions
Preheat oven to 350 degrees
In a medium bowl, place the earth balance (or butter or margarine or vegan butter) in and microwave until it is mostly melted.
In another medium bowl, combine the Almond Flour, Salt and Baking Powder. Combine
Add the crumbled bacon, chopped green onion and shredded lactose free gouda cheese to the dry mix and combine until evenly distributed through the flour.
To the mostly melted shortening, add 1 tbsp of sugar (we use ground demerara for flavor). Combine until the sugar goes smooth.
Add the egg to the wet mixture and gently combine.
Add the dry ingredients bowl to the wet ingredients bowl and combine until a soft dough forms. Shape into a bit of a ball within the bowl. Wrap with cling film.
Place in the freezer for 15-20 minutes.
Place the balled dough onto a mat and gently flatten until it forms into a disk about 7.5-8 inches wide. Make sure the sides are well formed with no cracks.
Cut the disk into 8 pieces.
Carefully transfer the pieces to a parchment lined tray. Leave room for the pieces to spread as they cook.
Place in the preheated oven and bake for approx 18 minutes (depending on your oven) and allow them to cool fully before moving to a plate or container.
