How Do We Get Our Textures so correct

If you baked prior to being gluten free, you already know what the recipe should come out like. We found that rice did not give a correct texture to the baking. We chose flours that give a profile similar to wheat – with fats, carbohydrates, fiber and protein. By mimicking what wheat looks like on a nutritional level, we were able to create a flour blend that looks and feels and works like wheat without any wheat ever.

Why No Rice?

Our research showed that rice is getting higher and higher trace levels of arsenic from the ground water that helps it thrive and grow. We use basmati rice in our food recipes, but no where else. Our belief is that if the gluten free world uses rice in everything like wheat is currently used, we will end up with the same problems with a rice centric industry. By avoiding rice in our baked goods, there is less chance we will be affected long term by the arsenic levels that are currently in most short grain rices.

We sure do work hard to get the tastes and textures we grew up with in products. We use different flours and starches to do it and it shows. We use demerara sugar which gives it a taste similar to brown sugar in our products. We use wonderful vanillas and chocolates.
