Does crispy delicious gluten free zucchini slices sound wonderful to you? They sure do to me. I grew up on whole foods and they are the reason I am as healthy as I am. I encourage anyone with a compromised gut to eat as much whole foods as possible.

Eat Healthy with Gluten free Zucchini Slices

Lunch for me usually is some kind of vegetables and lean protein concoction. A piece of baked fish, eggs and lactose free cheese slices, some sliced zucchini and white bean hummus. It is all pretty standard fare. However, sometimes I like to get a little fancy and put a little more effort in. This is one of my go to recipes for a quick whole food vegetable with a little something, something.

Gluten free zucchini slices do need a little something. I add a little pepper at the end to help up that flavor quotient. The recipe has to be quick and easy or it simply will not get done. Who has time for that? I found this recipe years ago and I cannot even remember where. Sorry whoever came up with it. I truly appreciate that I found it. It is an amazing recipe. I am so familiar with it after literally 8 or 9 years, I had to sit down and figure out what I actually do.

Rev Up Whole Foods to Make Them Delicious

Our crunchy delicious gluten free zucchini slices make zucchini more appealing. I don’t need it to be more appealing, but my vegetable hating daughter does. Since I truly want whole foods in her belly and her gut, I make this from time to time to entice her to eat her veg. It works. Life is simple with whole foods. Everything works better with whole foods. It may sound funny that a baker of processed gluten free goodies keeps spouting off about the benefits of whole foods. However, health matters more than cookies (although I do love a cookie). And making the vegetables delicious absolutely helps.

Crunchy Delicious Gluten free Zucchini Slices

Gluten free breadcrumbs, grated parmesian cheese (aged), garlic powder freshly grated black peppers ontop of zucchini slices. Baked to a golden brown. Delicious and wonderfully gluten free

Equipment

  • 1 Fine cheese grater
  • 3 bowl varying sizes
  • 1 Chef's knife
  • 1 cutting board
  • 1 baking sheet
  • Parchment Paper

Ingredients

  • 1 large zucchini
  • 1 tsp roasted garlic powder any kind of garlic will do.. finely ground
  • 56 grams grated aged parmesan cheese aged cheese have less to no lactose
  • 56 grams bread crumbs
  • grated Pepper
  • spray oil for the parchment paper to prevent sticking

Instructions

  • Preheat oven to 400 degrees Fahrenheit
  • Prep your ingredients. Grate the Cheese, place in a bowl. Measure the garlic and bread crumbs into bowls.

  • Mix the dry ingredients together.

  • Slice the Zucchini into approx 1/4 inch slices.

  • Place parchment on the baking tray and spray with oil
  • Place sliced zucchini on the baking tray, leaving space between the slices.

  • Top each slice with a generous portion of the cheese and bread crumb mixture.
  • Bake for 17 minutes (or more depending on your oven).
  • Plate and serve!
