Gluten Free Garlic Confit
We baked a low and slow garlic confit and ended up with roasted garlic in thyme and about three cups of flavored garlic and thyme oil for cooking

Instructions
Clean and separate each head of garlic. Remove Skins
Place all the cloves of garlic into a baking dish
Add the sprigs of thyme to the baking dish
Pour the olive oil over the garlic until it is covered with the oil.
bake in a 210 degree oven (Fahrenheit) for two hours and 15 minutes.
Remove from oven and let cool.
Scoop the garlic cloves out of the baking dish into another container.
Cover the garlic cloves with oil. You must keep all the cloves immersed in the oil.
Put the remaining oil into a glass jar and use in cooking.
