Ingredients
  • 2 lbs ground beef
  • 2 large eggs
  • 4 large cloves of garlic
  • 1/2 cup parmesan cheese - grated
  • 1 cup Divinely Gluten free Bread Crumbs
  • dash salt
  • dash pepper
  • 1 tsp italian seasoning
  • 1/2 cup minced parsley
Instructions
  1. In a large bowl, break up the ground beef with a fork.

  2. Add two eggs to meat, and work in with a fork.

  3. Add all the other ingredients to the bowl and work together until well combined. While some people use a fork to combine, I have been making meatballs all my life and we do it with our hands. Be careful not to overwork the meat. It makes the meatballs tough.

  4. With a small to medium cookie scoop, start measuring out the mix into small balls. Roll each measure of mix into a ball. Place in a large baking pan lined with parchment paper or aluminum foil. Repeat until all the meatballs are formed.

  5. Bake in a preheated 350 degree oven for 35 minutes.
