Gluten Free Breakfast Strata Recipe

Oh how I wanted to try a strata. Going Gluten Free had put a stop to that until we discovered Udi’s Gluten Free Bread. It has enough taste to not destroy the wonder that is a strata. Our Gluten Free Breakfast Strata Recipe is dedicated to the awesome folks at Udi’s Gluten Free that makes so much possible for people require to live a gluten free lifestyle.

The wonderful thing about a strata is that it sits in the fridge overnight marinating in strata goodieness. Udi’s bread can stand up extremely well to this soaking in egg and milk overnight. Many gluten free breads simply will fall apart (or are just too hard) when faced with the amount of liquid this recipe uses.

We tried it out recently when we had a friend stay overnight – we threw it together over a glass of Steadfast Gluten Free Beer. We took a basic strata recipe – added somethings, and came up with something that far exceeded my hopes.

Gluten Free Udi's Bread is the star of this amazingly simple strata. Perfect for any kind of special breakfast, holidays or overnight guests, or a bed and breakfast staple.

  • 1 box Pre Cooked Bacon 15 slices
  • 2 cups Half and Half or any milk
  • 1/4 tsp Ground Black Pepper
  • 1 tsp Sea Salt
  • 6 large Eggs
  • 2 cups Shredded Cheddar Cheese
  • 1 med onion chopped
  • 8 slices Udi's Gluten Free Multi Grain Bread the small loaf
  1. Cut the gluten free bread into cubes; grease a 10x10 rectangular baking dish - or any other desired pan. 

  2. Cut the bacon into thin slices

  3. In a large bowl, beat the half & half, the eggs, sea salt, pepper together with a fork or whisk

  4. Break up the bacon over the liquids in the large bowl. Add the Onion, the cheese and mix well. Add the bread cubes and combine.

  5. When all the bread has been covered in egg and the ingredients are well blended, pour into the greased baking pan. 

  6. Cover with wrap and refrigerate until ready to use, usually overnight or at least 8 hours. 

  7. Preheat oven to 350 degrees. When oven has come to temperature, place strata in the middle of the oven and cook for an hour. 

  8. Allow to cool slightly and then watch out! This is serious food!
