Gluten Free Apple Pie with Streusel Topping

Who doesn’t love a Gluten Free Apple Pie with Streusel Topping? Well, we here love them. Getting ready for Thanksgiving means testing our Apple Pie Recipe. It brings me back to my childhood, watching my mother peeling apples.

Who doesn’t Love a Gluten Free Apple Pie?

We had a classic family recipe and I remember it well. Macintosh Apples, cinnamon, butter, sugar and a tiny bit of flour – something my mother told me was very important. The smells were delicious and I have been trying for a year to come up with a basic gluten free flour blend that would lend itself to many things, including our family recipe for apple pie.

I have not found the perfect translation to a gluten free pie crust yet. There are just so many hours in the day, and I just haven’t found it yet. Sad.

However, we have a delicious ginger cookie that I really felt would make an incredible graham cracker crust. I was actually kind of right. Now I find these cookies to be my absolute favorite, and they have butter in them, so we do not need as much butter as others might use in a graham cracker crust.

So, you end up with a pretty tasty combination when you merge the delicious apple filling with a ginger cookie crust. Perfect for the fall, with it’s use of warming spices, I was truly happy with the results, and we hope you are too.

Gluten Free Apple Pie with Ginger Cookie Crust

We take delicious ginger cookies to make a graham type crust, merge it with spices, butter and delicious Macintosh apples for a heavenly Thanksgiving dessert.  Gluten Free and Delicious!

Ingredients

Ginger Cookie Crust

  • 1 1/2cups Ginger Cookie Crumbs
  • 4tbsp Butter
  • 1/4cup Dark brown or demerara sugar
  • pinchSalt
Apple Pie Filling

  • 8Large Macintosh Apples
  • 2/3cup Sugar
  • 2tsp Ground Cinnamon
  • 1/8tsp Salt
  • 4Tbsp Butter
Streusel Topping

Instructions

Streusel Topping

  1. Mix the Gluten Free Flour Blend with Sugar and Cinnamon. Cut Butter into the flour mixture. Work together until crumbly.
Ginger Cookie Crust

  1. If Cookies are not crushed, they need to be. They can be placed into a food processor and finely crushed. If no food processor is available, simply crush in whatever manner you would use.
  2. Put cookie crumbs, sugar, cinnamon, and salt together and stir until combined.
  3. Melt butter and add to the crumb mixture and stir until combined.
  4. Grease a pie plate with butter and pour the buttered crumb mixture into the pie plate. Press the mixture into the bottom and up the sides of the 9″ pie plate. Press hard – use a flat bottom glass to apply pressure to get an even bottom. Use your fingers to press into the sides.
  5. Put into the freezer to set it up while you mix the apples together.
Apple Pie Filling

  1. Preheat oven to 350 degrees.
  2. Mix flour, sugar, cinnamon and salt into a large bowl
  3. Cut, core and peel 8 large Macintosh apples. Slice thinly and add to the large bowl of dry mix. Stir together until the apples are well coated with the sugar, cinnamon mixture.
  4. Remove pie plate from freezer. Pour about 1/3 of the apple mixture into the pie plate and dot with a little over a tablespoon of butter. Do this twice with the remaining apple mix and butter.
  5. Sprinkle with our streusel topping and bake in a 350 degree oven for one hour.

As with most Gluten Free things, give sufficient time to set up before cutting and eating. It is always worth the wait!
